Germán Ortega has launched an impressive culinary venture at Bevir by Lopesan, aiming for Michelin recognition in the competitive world of fine dining. This new restaurant marks a significant collaboration between Ortega, a prominent figure in Gran Canaria’s gastronomy, and Lopesan Group, signalling their ambition to elevate the region’s culinary reputation.

Upon entering the restaurant, diners are greeted by a markedly transformed space. The updated interior boasts excellent soundproofing, allowing guests to enjoy their meals without distractions from the outside world, creating a comforting and immersive atmosphere.

Diego Tornel, named Spain’s Best Sommelier 2026, leads the front-of-house team. His exceptional coordination and warm service, coupled with precise timing and a well-curated wine selection, offer a dining experience akin to a finely choreographed ballet.

Ortega’s tasting menu, named Amurga, showcases a deep conceptual maturity. It begins with “Trashumancia,” paying homage to the island’s landscapes, featuring refined dishes such as blueberries with Queso Flor and a delectable cheese fritter. The menu smoothly transitions to coastal flavours with “Anzuelo,” featuring artisanal catches like mackerel and sardine in a comforting broth.

The standout dish from the “Enyesque” section, “Pera con Huevas y Clavo,” offers an extraordinary combination of land and sea, while the “Camarón de Veneguera,” sourced directly from Ortega’s family estate, delights with exceptional local produce.

The culinary journey continues with a stunning “Atún con Caviar” and culminates in the traditional “Sopa de Pichón,” a rich and memorable dish celebrating the essence of local cuisine.

Desserts maintain the high standards, with playful and creative options like “¿Dónde Está la Pelotita?” leaving diners with a smile.

The restaurant’s drink selection, expertly curated by Tornel, includes local ciders and wines that harmonise beautifully with Ortega’s dishes.
